YUM WOON SEN – Glass Noodle Salad Recipe

Servings: 2 Portions
Ingredients:
- 40 g dry glass noodles
- 2 cloves of garlic
- 10 sprigs of coriander stems and leaves seperated
- Thai chillies to taste
- 1 tbps palm sugar
- 2 tbps fish sauce
- 3 tbps fresh lime juice
- 1 tomato cut into wedges
- 1/4 cup red onion sliced
- Leaves from 1 celery stalk
- 1/4 cup roasted peanuts
Method
- Soak noodles in room temperature water for 7 – 10 minutes until soft and pliable. Drain and cut noodles to shorten them.
- Add noodles to a pot of boiling water for 2 minutes, then drain and keep them in a strainer to remove excess water.
- Cut coriander stems into small chunks and place in mortar and pestle with garlic, chillies (that have been cut into large chunks) and a pinch of salt.
- Pound into a paste (approximately 2-3 mins)
- Add palm sugar, fish sauce and lime juice. Mix everything together.
- Place tomato, onion and celery into a large mixing bowl; add the strained noodles and give them a quick mix.
- Pour the dressing over the noodles and toss everything together.
- Plate into your serving dish and add the crushed peanuts and coriander leaves on top.
