LARB TOFU
Prep Time: 20 Minutes
Servings: 2 Portions
Ingredients:
- 1 packet extra firm tofu
- 2 tbps fish sauce
- 1 sliced onion
- 2 tbps lime juice
- Roasted chilli powder
- 1 green onion chopped
- 2 -3 tbps roasted rice powder (you can take uncooked rice, dry roast and coarsely grind)
- 4-5 sprigs of chopped coriander
- 1/4 cup of mint leaves (torn if they are large)

Method
- In a wide pan over low to medium flame add the tofu. Mince the tofu as it cooks for 3 – 5 minutes. Remove from the heat and add to your mixing bowl.
- Add onions to the bowl as the tofu is hot.
- Add in the fish sauce, lime juice, chilli flakes, green onions and coriander.
- Stir to mix everything together
- Add the toasted rice and stir it together.
- Plate onto your serving dish and add the mint. Serve warm or at room temperature.
