LARB TOFU

Prep Time: 20 Minutes
Servings: 2 Portions

Ingredients:

  • 1 packet extra firm tofu
  • 2 tbps fish sauce
  • 1 sliced onion
  • 2 tbps lime juice
  • Roasted chilli powder
  • 1 green onion chopped
  • 2 -3 tbps roasted rice powder (you can take uncooked rice, dry roast and coarsely grind)
  • 4-5 sprigs of chopped coriander
  • 1/4 cup of mint leaves (torn if they are large)

Method

  1. In a wide pan over low to medium flame add the tofu. Mince the tofu as it cooks for 3 – 5 minutes. Remove from the heat and add to your mixing bowl.
  2. Add onions to the bowl as the tofu is hot.
  3. Add in the fish sauce, lime juice, chilli flakes, green onions and coriander.
  4. Stir to mix everything together
  5. Add the toasted rice and stir it together.
  6. Plate onto your serving dish and add the mint. Serve warm or at room temperature.
