Mango Foxtail Millet Salad
Prep Time: 20 Minutes
Servings: 2 Portions
Ingredients:
- 1/2 cup millet
- 1/2 ripe firm mango
- 1/2 red onion
- 1/4 capsicum
- 1/4 cup peanuts
- 1 stalk mint leaves
- 1/4 cup olive oil
- 1 tbsp honey
- 1 tbsp mustard sauce
- chilli flakes
- salt pepper

Method
- Boil the millet strain and cool.
- Chop mango and capsicum into small cubes.
- Slice the onions finely.
- Roast the peanuts and crumble but not fine.
- Tear the mint leaves and keep aside.
- In a small bowl add the olive oil, honey and mustard and whisk.
- In your serving bowl add the millet and all the other ingredients except the dressing ingredients.
- Before serving add the dressing salt pepper and sprinkle the chilli flakes on top.
- Give it a nice toss and serve chilled.
