Mango Foxtail Millet Salad

Prep Time: 20 Minutes
Servings: 2 Portions

Ingredients:

  • 1/2 cup millet
  • 1/2 ripe firm mango
  • 1/2 red onion
  • 1/4 capsicum
  • 1/4 cup peanuts
  • 1 stalk mint leaves
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1 tbsp mustard sauce
  • chilli flakes
  • salt pepper

Method

  1. Boil the millet strain and cool.
  2. Chop mango and capsicum into small cubes.
  3. Slice the onions finely.
  4. Roast the peanuts and crumble but not fine.
  5. Tear the mint leaves and keep aside.
  6. In a small bowl add the olive oil, honey and mustard and whisk.
  7. In your serving bowl add the millet and all the other ingredients except the dressing ingredients.
  8. Before serving add the dressing salt pepper and sprinkle the chilli flakes on top.
  9. Give it a nice toss and serve chilled.
