Quinoa Salad Recipe

Prep Time: 20 Minutes
Servings: 4 Portions

Ingredients:

  • 1/2 cup Quinoa
  • 1/4 cucumber
  • 1/4 red onion
  • 1/4 cup boiled chickpeas
  • 1/4 cup mixed yellow and red bell pepper
  • 1 /4 cup tomato
  • Few springs mint leaves
  • 200gms feta cheese
  • 1/4 cup mixed olives
  • 1/4 cup olive oil
  • 1/2 lemon
  • 2 tbsp mixed dried herbs
  • salt pepper to taste

Method

  1. Boil and strain Quinoa and chickpeas separately. Keep to drain.
  2. Finely chop into cubes- yellow and red peppers. cucumber, tomatoes and olives.
  3. Slice onions.
  4. Tear the mint leaves and crumble feta cheese with hands.
  5. In a bowl add olive oil, lemon juice, dried herbs, salt and pepper.
  6. In your salad bowl add the cooled quinoa and chickpeas, now add all the veg and cheese. Let it all cool further in the fridge.
  7. Pour the dressing over this 10 min before ready to serve. Give it a nice toss and serve.
