SOM TAM- Raw Papaya Salad

Prep Time: 20 Minutes
Servings: 2 Portions

Ingredients:

  • 250 g papaya
  • 2 cloves garlic
  • Thai chillies
  • 2 tbsp palm sugar
  • 4-5 long beans cut into large chunks
  • 1/2 cup of tamarind paste
  • 2 tbps fish sauce
  • 2 – 3 tbps fresh lime juice
  • 5 – 6 cherry tomatoes
  • Few sprigs of chopped coriander
  • 1/4 cup roasted crushed peanuts

Method

  1. Shred the papaya and place it in a bowl lined with paper towels to absorb excess water
  2. Add the garlic and chillies in the mortar and pestle with a pinch of salt.
  3. Pound together for 2-3 minutes.
  4. Add a small amount of the shredded papaya along with the beans and cherry tomatoes. Pound until they are broken.
  5. Add in the fish sauce, lime juice, palm sugar and tamarind paste.
  6. Pound into a paste (approximately 2-3 mins)
  7. In your mixing bowl toss together the papaya and the dressing.
  8. Place in your serving bowl, top with peanuts and coriander. Serve cold.
