YUM KAO POAD – Spicy Corn Salad Recipe
Prep Time: 10 Minutes
Servings: 2 Portions
Ingredients:
- 1 cup boiled corn kernels
- 1/2 cup each of chopped red, yellow and green capsicum.
- 1/2 cup shredded carrots
- 1 sliced onion
- 1/2 cup celery leaves
- 2 gloves garlic
- Palm sugar
- 2 tbps lime juice
- 2 tbps fish sauce
- Thai chillies

Method
- Add the garlic and chillies in the mortar and pestle with a pinch of salt. Pound together for 2-3 minutes.
- Add in the fish sauce, lime juice and palm sugar.
- Pound into a paste (approximately 2-3 mins)
- In a large mixing bowl place the corn, capsicum, onions and celery with the paste.
- Toss everything together and serve cold.
