YUM KAO POAD – Spicy Corn Salad Recipe

Prep Time: 10 Minutes
Servings: 2 Portions

Ingredients:

  • 1 cup boiled corn kernels
  • 1/2 cup each of chopped red, yellow and green capsicum.
  • 1/2 cup shredded carrots
  • 1 sliced onion
  • 1/2 cup celery leaves
  • 2 gloves garlic
  • Palm sugar
  • 2 tbps lime juice
  • 2 tbps fish sauce
  • Thai chillies

Method

  1. Add the garlic and chillies in the mortar and pestle with a pinch of salt. Pound together for 2-3 minutes.
  2. Add in the fish sauce, lime juice and palm sugar.
  3. Pound into a paste (approximately 2-3 mins)
  4. In a large mixing bowl place the corn, capsicum, onions and celery with the paste.
  5. Toss everything together and serve cold.
